Banqueting is the hospitality sector function that produces and executes organized, large-scale group dining events, such as weddings, corporate galas, and conferences. Distinct from general restaurant operations, it relies on pre-selected menus, advance headcounts, and dedicated function space to generate high-margin food, beverage, and room rental revenue.

How it is used

Revenue managers and F&B directors track banqueting metrics to optimize function space profitability rather than just room nights. Because banquet menus are planned months ahead, operators accurately forecast food costs, minimize waste, and schedule labor efficiently. BEOs (Banquet Event Orders) govern execution, binding clients to minimum spend guarantees and strict attrition clauses. Decisions driven by banqueting performance include setting minimum space rental fees, establishing minimum food and beverage spends during peak dates, and evaluating whether to displace transient room inventory to secure lucrative corporate group catering contracts.

Worked example

A hotel with 10,000 square feet of function space hosts a corporate gala. The event generates $45,000 in catered food, $15,000 in beverage sales, and $5,000 in room rental fees, totaling $65,000 in gross revenue. The Banqueting Revenue Per Available Square Foot for this event is $65,000 / 10,000 sq ft = $6.50 per square foot.
